Ingredients
- ½ cup BARLEYMAX flakes (45g)
- 1 cup popcorn
- 250g dark chocolate
- ¾ cup pistachios (100g), chopped
- ½ cup walnuts (50g), chopped
- 2 tablespoons pepitas (30g)
- 1 cup dried apricots (130g), chopped
- ½ cup shredded coconut (30g)
- 1 tablespoon extra virgin olive oil
Method
- Break up the chocolate into a microwave-safe bowl and add oil. Microwave for 90 seconds and stir. Microwave in further 10 second intervals (if needed) until melted.
- In a separate bowl, mix together remaining ingredients until well combined.
- Cover ingredients with melted chocolate and stir until coated.
- Pour mixture into a lined baking tray.
- Place in the fridge until set.
- Cut into preferred sized pieces and serve.
